RICE AND CORN CAKES SELL LIKE HOT CAKES

Canadians are eating lighter, according to ACNielsen's 1995 Annual Market Review. Rice and corn cakes make up the fastest growing food category with a 63% increase in dollar sales over 1994. Roasted and ground coffee and granola bars, fruit snacks and cereal bars followed, each having sales increases of 38%. Canned mackerel came in third with a 35% jump and ice tea (excluding cans) rounded out the top five with a 34% gain in dollar sales. Canned ice tea, liquid coffee whiteners, bread and roll mixes and cat treats were also among the top ten categories.
