VEGETARIANISM IS IN

Vegetarianism is becoming more and more fashionable, according to a study by Find/SVP of New York. The research firm estimates that the U.S. market for meat alternatives will grow to $662 million by 1999, when sales of meatless prepared meals will reach $29.5 million, dairy alternatives $286 million and meat alternatives $347 million. The U.S. market for meat alternatives from 1989 to 1994 grew from $138 million to $286 million. Consumers say they are attracted to the vegetarian lifestyle because it is more healthful, they feel compassion for animals and vegetarian meals are cheaper to prepare. Supermarkets have become the largest sellers of meat alternatives, with 52% of sales.
