Castello promotes blue cheese

Cheese brand Castello has begun a promotion in support of its blue cheese products. According to the company, the promotion is a response to a statement by celebrity Kim Kardashian that she “hates” blue cheese. In an effort to change her opinion, the company retained Food Network Canada host Afrim Pristine, described by the company has “Canada’s only Maître Fromager,” or cheese master, to develop three bite-sized food pairings intended to highlight the appeal of blue cheese. They include caramel sauce on a shortbread biscuit with blue cheese crumble on top, a combination of blue cheese and brie on a baguette with prosciutto and apple slices, and a slice of pear toped with gorgonzola, fig jam and a walnut. The recipes have been posted to Pristine’s Instagram page.
“One of the secrets to enjoying blue cheese is how you pair it,” said Pristine. “The three blue cheese bites I created are a celebration of the right flavor combinations offering low risk and high-reward. Think of blue cheese as the ocean blue Kim. Sometimes you have to go in knee-deep.”
